About El Fuego:

Opening in Spring 2026, El Fuego will be Collingwood’s first elevated Mexican restaurant and nightlife experience — combining the rich culinary traditions of Mexico with bold cocktails, vibrant design, and a lively evening vibe. With roots from Sinaloa, Mexico, and a strong hospitality background, the founders are crafting a warm, soulful space where food, culture, and music come together.

We’re looking for a visionary Head Chef who can lead the kitchen, build a team, and craft a menu that’s as soulful and fiery as the name itself.

The Role:

As Head Chef, you’ll be responsible for the culinary identity, operations, and leadership of El Fuego’s kitchen. This is a foundational role — you’ll help launch the concept and grow it into a community favourite and regional destination.

Responsibilities:

- Develop and execute a vibrant menu rooted in authentic Mexican cuisine (with creative freedom)

- Source and maintain relationships with high-quality suppliers, including Mexican-imported ingredients

- Build, train, and lead a back-of-house team (5–10 staff) with a focus on consistency, safety, and speed

- Collaborate with ownership on menu pricing, costing, and profitability

- Maintain a clean, compliant, and efficient kitchen per Ontario food safety standards

- Contribute to seasonal features, events, and potential late-night offerings

- Help shape El Fuego’s culinary reputation as part of a unique restaurant-nightlife concept

Who You Are:

- 5+ years of experience as a Head or Sous Chef, ideally in Mexican, Latin, or contemporary cuisine

- Strong leadership and team development skills

- Excellent knowledge of food costing, inventory, and kitchen systems

- Passionate about culinary innovation, food quality, and hospitality

- Calm under pressure, organized, and solutions-focused

Bonus: Spanish-speaking, experience with tequila/cocktail pairing menus, or working in tourist markets

Compensation & Perks:

- $80,000–$95,000 base salary, based on experience
